On arrival at Tia Rebecca’s, you are handed a glass of fizz and a warm plate of nachos and told to dig in. These nachos are like no other – fresh out the pan with chunky sauce to scoop up – you’re supposed to get messy! Avocados, lime and chilies and freshly chopped vine tomatoes, mango and red onion with handfuls of coriander. Bliss!
When I spent time in Santiago de Chile I lived with a family who had recently returned to Chile after fleeing the Pinochet Dictatorship. Snra Aguilara always said the thing she really craved when she was in exile was Chilean Bread. I found it strange that this would be what she missed most but it really does have a taste of its own and served warm fresh out the oven it takes me straight back to Santiago in the shadow of the Andes.
