Pans y co (bread etc)
My daughter Amelia’s favourite – if the position of global chief pan con tomate taster were open; there would be no contest. We have honed this recipe down so it meets her exacting requirements! Disfrutalo!
When I spent time in Santiago de Chile I lived with a family who had recently returned to Chile after fleeing the Pinochet Dictatorship. Snra Aguilara always said the thing she really craved when she was in exile was Chilean Bread. I found it strange that this would be what she missed most but it really does have a taste of its own and served warm fresh out the oven it takes me straight back to Santiago in the shadow of the Andes.
On arrival at Tia Rebecca’s, you are handed a glass of fizz and a warm plate of nachos and told to dig in. These nachos are like no other – fresh out the pan with chunky sauce to scoop up – you’re supposed to get messy! Avocados, lime and chilies and freshly chopped vine tomatoes, mango and red onion with handfuls of coriander. Bliss!
