My Mum, otherwise known as Nini to the grandkids, loved Spain as much as me. Always a phenomenal cook, whilst she was over visiting, she soaked up Spanish flavours and recipes and this is her take on a Spanish classic with green peppers and paprika. Takes me back to Barcelona days in the warm evenings, crusty bread in hand, mopping up every last drop of sauce.
